Pastores is the kind of place each of us wishes we had in our own neighborhood. Because of its off-the-beaten-track location (in an unprepossessing storefront at the far southern reaches of Mission Street, just past Cortland Avenue) and its unpredictable hours, the restaurant is often half-empty—which is a travesty, especially because owner, chef and server Irma Calderon, a native of Mexico City, is a terrific cook. She sizes you up, then prescribes what you’ll be eating that day, fussing over you like a mother. We challenge you to find better chilaquiles or a finer version of chiles rellenos, or another Mexican restaurant in this city serving food with more obvious pride—and reason for being proud. Actually, don’t bother looking. We have, and it doesn’t exist.
