Located in the Best Western Americania (which has been managed by Joie de Vivre Hospitality for the past year), Custom Burger celebrates freedom of choice. Choosing the patty is easy (options include lamb, salmon and Kobe beef, among others); it’s picking the toppings that causes hand-wringing. Should you get applewood-smoked bacon, Point Reyes blue cheese, a fried egg, grilled pineapple, piquillo peppers or icebox slaw? “Ketchipotle” or Red Tail Ale barbecue sauce? You also have a choice of where to eat, as the full menu is available at the adjoining bar, which has better ambiance at night. (And a Hangar One martini goes so much better with your burger than a Coke.) Get used to this kind of decision-making: The soon-to-open Horizon in North Beach will have a similar concept, but Hubert Keller’s Burger Bar in Las Vegas was the original. Expect an SF branch of Keller’s slamdunk to arrive next year.
